ICE CREAM JUNKIES – PORT WINE

Do you ever yearn for the fine things in life? Originally made in Portugal, it travelled over the sea to the rest of the world. Port wine. It goes well in cocktails and even by itself! We find it tastes the best as an ice cream flavour.
With the summer temperatures right now, the fresh, crisp and cold ice cream prepared by our fantastic Unold ice cream machine is just perfect.
“These Romans are crazy.” That may be, but because of them the importance of wine production in Portugal increased. It was Henry of Burgundy who planted this particular grape variety in the 11th century. Enough waffling, time for ice cream.
Turn on your Unold ice cream machine, throw in the ice cream mixture, freeze and enjoy your port wine ice cream.
For the port wine ice cream:
Pour the port into a small pot and boil down to 250 ml. Mix together milk, cream and sugar and heat to 50 °C. Remove from heat and add 75g of the white chocolate. Add port and crème fraîche to the mixture and freeze for 1 hour in the Unold Profi ice cream machine. Use a knife to slice slivers off the chocolate. Serve ice cream with chocolate slivers.

500ml port wine
150ml milk
150ml cream
80g sugar
50g crème fraîche
150g white couverture chocolate
